Recipe – Coconut cupcakes

What’s not to love?

I’m about to let you in on one of my favourite coconut cupcake recipes. The end result is light and fluffy, creamy, and just AMAZING.

Okay, let’s get right into it.

First, let’s start with the ingredients you’ll need:

Ingredients for cupcakes:

  • 1 ½ cups of flour
  • 1 teaspoon of baking powder
  • ¼ teaspoon of salt
  • 1 stick of unsalted butter (115g)
  • ¾ cup of sugar
  • 2 eggs
  • 1 teaspoon of vanilla extract
  • ½ cup of coconut milk
  • ¼ cup of canola oil
  • ½  cup of shredded coconut

Ingredients for frosting/toppings:

  • 1 stick of unsalted butter (115g)
  • 85g cream cheese
  • 2 cups of confectioners sugar
  • 3 teaspoons of coconut milk
  • Toasted shredded coconut

Okay, let’s get baking.

Instructions for cupcake

#1. Preheat your oven to 185C 

#2. Line a muffin tray with cupcake liners/cups

#3. Using an electric mixer, combine your butter, oil, and sugar

#4. Add your eggs and continue mixing 

#5. Add vanilla extract and continue mixing

#6. Sift your flour, baking powder, and salt into a separate bowl

#7. Pour ½ of your wet mixture into the dry mix

#8. Pour the coconut milk into the combined mixture

#9 Continue beating with an electric mixer until just mixed

#10. Pour other ½ of wet mixture and beat until just mixed

#11. Add coconut flakes and gently fold in

#12. Divide batter evenly across your cupcake liners

#13. Insert into oven and let them bake for 15-20mins

That’s it for your cupcakes!

If you want to make sure your cupcakes don’t overcook, you can use a toothpick and insert it into the cupcake’s centre. The toothpick should come out without any gooey stuff. If it doesn’t, let them cook for a little longer.

Now for the topping…

Instructions for frosting & topping

#1. Mix your butter and cream cheese with an electric mixer until it has a smooth texture

#2. Gradually add confectioners sugar and continue mixing

#3. Add coconut milk. The more you add, the thinner it becomes. So only add a little bit at a time.

#4. Stir in your vanilla extract

#5. Now add it to your piping bag and use your favourite nozzle to add to the top of your cupcakes, and you’re done!
